Ingredients: a bowl of overnight rice and 2 eggs.
Accessories: 20g onion, proper amount of oil and salt.
1. Take the overnight rice out of the fresh-keeping layer of the refrigerator and break it up. Wash the green onions and cut them into chopped green onions for use. Beat two eggs into a bowl and beat them with chopsticks until the egg white and egg liquid are completely blended, and there is fine foam on the surface of the egg liquid.
2. Then take a pan and heat it until the palm of your hand is hot, pour in 15ml peanut oil, turn the heat to oil heat, then pour in the beaten egg liquid, and shake the pan to make the egg liquid expand and solidify.
3. After the eggs swell, solidify and set, stir them quickly with chopsticks, then add the rice and stir fry over high fire.
4. Stir-fry while pressing with a spatula to fully heat the rice grains. It is best to use overnight rice for fried rice, because the freshly steamed rice is too sticky, not refreshing and easy to agglomerate.
5. When the rice is stir-fried, add chopped green onion and salt 1g for seasoning, stir-fry evenly, then turn off the heat and take out the pot.
