The practice of old goose soup:
1. Cut the old goose into pieces, blanch it in boiling water and wash it for later use.
2. Pour water into the pot, add goose, medlar, onion, ginger and cooking wine, and simmer for 20 minutes over medium heat.
3. Bring to a boil with high fire for 10 minute, and then add salt to taste.
