Color. Real crimini mushrooms will turn red even when they are in water. Red mushrooms are red because they have their own natural coloring in them, so turning red is a sure thing. It's just that the water of fake crimini mushrooms will be dark red and have the flavor of dye, while the water of real crimini mushrooms will be pink and have the fragrance of mushrooms. After the crimini mushrooms are cooked, the color of the mushrooms will fade away as all the nutrients from the mushrooms are absorbed into the soup. The flavor of crimini mushrooms is in the soup.
The difference between authentic crimini mushrooms and other crimini mushrooms is that authentic crimini mushrooms have a bulge in the center of the cap, a thicker, darker red cap, and an uneven darker red color on the inside of the foot, which is aromatic and has a delicious flavor.
