First, hot pot

It is cold in winter in the south, and there is no heating at home. It gets cold as soon as it comes up. Eating hot pot in the New Year is the choice of many families. Hot pot is not only delicious, but also free to choose your favorite ingredients to satisfy the taste of the whole family. Because there are children at home, I eat hot pot during the New Year. This soup pot for stewing chicken ribs is the most suitable choice.

Chop the ribs into small pieces, chop the chicken into small pieces, blanch in a pot with cold water, add ginger slices and onion knots, and cook the wine to remove the fishy smell;

Blanch, remove, put in a saucepan or time-saving pressure cooker, add ginger slices and water to stew.

Braised pork knuckle

Exercise:

Chop pig's trotters, put them in cold water, add ginger slices, onion knots and cooking wine, boil them with strong fire and blanch them to remove fishy smell.

Put oil in a hot pan, stir-fry the crystal sugar until it melts, and wrap the trotters with sugar after stir-frying.

Add salt, light soy sauce, light soy sauce, light soy sauce, dried Chili, ginger slices, star anise and fragrant leaves, and stir well.

After boiling in hot water, simmer for 2 hours or press in a pressure cooker for 20 minutes.

After stewing, the juice is collected by fire.

Five, stewed duck

When I was a child, I ate pork, chickens, ducks and geese at home during the Spring Festival. Goose tastes terrible now, but ducks are still indispensable. There are many ways to cook ducks, such as blood duck and beer duck, which are all eaten as meals. However, it is more atmospheric to eat ducks in the New Year. You can stew the whole duck, then chop it up and dip it in the sauce.

Add chopped lotus root or water chestnut, salt, pepper, allspice powder, chicken essence, onion, egg and starch, and stir in one direction.

Add a small amount of onion and Jiang Shui in three times and stir until the juice is completely absorbed. When the meat foam is thick, you can hang it.
