800g grass carp segments, 150g flour, 10g chopped green onion, 8g garlic slices, ginger 10 grams of shredded silk, 20 grams of cooking wine, 205 ml of cooking oil, 2 grams of Sichuan peppercorns, 10 grams of dried chili pepper
1. Set aside chopped green onion, garlic slices and shredded ginger
2. Pour in grass carp section, cooking wine, stir evenly, and marinate for 30 minutes
3. Pour in flour and coat evenly with flour
4. Pour in 200 ml of cooking oil and heat over high heat until 70% hot , add the fish, turn to low heat and fry until golden on both sides
5. Pour in 5 ml of cooking oil, add Sichuan peppercorns and dried chili peppers, add shredded ginger, chopped green onion and garlic slices, and sauté over high heat
