Ingredients: 2 tbsp soy sauce, 1 tsp each of sugar, rice wine and rock sugar, 2 tsp each of Chai Fish Extract, dried seaweed and ginger powder.
How to make: Mix all ingredients well.
* Hot and Spicy Sauce
Ingredients: 1/4 cup lemon juice, 2 tbsp ketchup, 1 tsp each chili oil, chili sauce, black pepper, 1 tbsp each oyster sauce, minced chili pepper, yellow wine, brown sugar, 1/2 tsp minced garlic.
Method: Mix all ingredients well.
* Sour Plum Sauce
Ingredients: 3 sour plums, 2 teaspoons each of sour plum preserves and granulated sugar, 1 teaspoon of white vinegar.

* Apple Sauce
Ingredients: 1 apple (cored and beaten into sauce), 1/2 cup apple juice, 1 teaspoon white vinegar, 1/2 teaspoon mustard, 1 teaspoon each honey and onion, salt and pepper to taste.

* Five Flavors Sauce
Ingredients: 2 teaspoons each of soy sauce, sesame oil, balsamic vinegar, white vinegar, 3 teaspoons of ketchup, 1 teaspoon each of minced ginger, garam masala, and minced chili.
How to make: Mix all ingredients well.
* Garlic Sauce
2 teaspoons garlic paste, 3 teaspoons soy sauce, 1 small teaspoon each of monosodium glutamate (MSG), rice wine, and white vinegar, 1 teaspoon granulated sugar, and pepper to taste.
Method: Mix all ingredients well.
Garlic Barbecue Sauce
Ingredients: 2 tbsp soy sauce, 2 tbsp oyster sauce, 2 tbsp icing sugar or maltose, 1 tsp five-spice powder, 1/4 tsp pepper, 3 and 1/2 cups of water, 1 tbsp wine, 12 cloves of garlic
How to make it: Place 2 tbsp oil in a pot and deep-fry the garlic until it turns golden brown, then remove it from the pot. In a separate pot, bring all other ingredients to a boil, add ( 1 ) clove of garlic and simmer until thickened. Wash and drain the meat, marinate in soy sauce and sugar for 1~2 hours.
Capsicum Salsa
Ingredients 4 tbsp salsa, 2 tbsp black pepper BBQ sauce, 2 tsp crushed red pepper, 2 tsp crushed garlic, 1 tbsp vinegar, 2 tbsp oil, 1 tbsp sugar, 2 tbsp soy sauce

BBQ Barbecue Sauce
Ingredients 4 tbsp ketchup, 2 tbsp seafood sauce, 1 tbsp French mustard, 2 tbsp ouzo sauce, 1 tbsp black pepper sauce. 1 tbsp tomato sauce, 2 tbsp vinegar, 1 tbsp olive oil, 1/4 onion (finely chopped), 2 garlic cloves (finely chopped), 1 tsp coarsely ground black pepper, 1 tsp salt, 1 tbsp sugar, 1 tsp chili water (for steak)
How to make it Pork cut into small pieces and skewered with apple and kiwi pieces. Brush with B.B.Q. BBQ sauce and grill.
Thai Sauce
Ingredients Icing sugar, oil, soy sauce, fish sauce and lemon juice.
How to Make Thai Sauce Add rock sugar to a saucepan and bring to a boil. Add water and simmer over low heat, then add red vinegar and cook until the sauce thickens.
Japanese Teriyaki Sauce
Ingredients: 1/2 tbsp soy sauce, 1 tbsp oyster sauce, 1.5 tbsp sugar, 1/3 tbsp sesame oil, 1 tbsp each of cornstarch and water, 1.5 cups of water, a pinch of pepper and a pinch of salt.
How to make it 1.5 cups of water, add all the ingredients and thicken with cornstarch until thick.
Shacha Sauce
Ingredients: 3 tbsp each of shacha sauce, black pepper sauce, honey, 1 tbsp each of oyster sauce and wasabi sauce.
How to Make: Mix well (can be thickened with water or cooking wine).
Curry Yogurt Sauce
Ingredients: 1 small can of plain yogurt, 1 tbsp each of curry powder, ginger, garlic and honey, 1 tbsp French mustard, salt and pepper.
How to Make: Mix well.
Warashi Sauce
Ingredients: 2 tbsp soy sauce, 1 tbsp each cooking wine and ketchup, ginger, onion puree, lemon juice.
How to Make: Mix well.
Remarks Suitable for fruits, vegetables and meat.
Mexican Hot Sauce
Ingredients: 1 cup diced tomatoes, 1/3 tbsp each of fructose, grated ginger, 1/2 tbsp each of cilantro, grated onion, lemon juice, 2 tsp each of Tabasco sauce, salt and pepper to taste.
How to Make: Mix well.
Remarks Suitable for all.
Vietnamese Caramel Sauce
Ingredients A 1 cup sugar, B 1 teaspoon water, C 1/4 teaspoon salt, D 1/2 cup water
How to make caramel sauce 1. Dissolve salt in (C) 1/2 cup water and set aside ]2. Dissolve sugar in (A) 1/2 teaspoon water and cook over medium heat. When the caramel sauce turns dark brown, remove the pan from the heat and slowly add (1) cup of brine to the caramel sauce. 3. Let the caramel sauce cool and serve in jars Note This is the caramel sauce used in Vietnamese cuisine
Hot Tomato Sauce
Ingredients 1/2 cup green bell pepper. 1 cup diced tomatoes. 1/4 cup diced onion. 1/4 cup diced red pepper. 1 Tbsp. chopped cilantro. 1 tbsp lemon juice
Seasoning Oil 1 tsp. Salt a pinch. A pinch of pepper
How to Make: Mix all ingredients finely and serve chilled. Cover with plastic wrap to prevent darkening, and serve chilled with tortilla chips or other snacks and dishes.
