Fried three winters are winter bamboo shoots, mushrooms and vegetables.
1. Winter bamboo shoots: bamboo shoots developed from lateral buds of underground stems (bamboo whips) of Phyllostachys pubescens around beginning of winter. Because it has not been unearthed, bamboo shoots are fresh and tender, which is a dish that people like to eat very much.
2. Mushroom: It is an edible fungus, which is rich in various trace elements needed by protein and human body. Dried mushrooms are fragrant, but fresh mushrooms are not. The main reason is that when fresh mushrooms are processed into dried mushrooms, when the water is driven away by heat, the enzymes in mushrooms will react chemically whether they are baked in the sun or in the fire, making some qualities turn into fragrance.
3. Winter vegetable: it is a semi-dry fermented pickled food. One of the famous specialties in China, it is often cooked in soup or fried food, and it tastes delicious. There are production systems all over the country, represented by Sichuan winter cuisine, Tianjin winter cuisine and Chaoshan winter cuisine.
