4. At the beginning, the solution is very turbid. At this time, don't stir it. Remember, just stand by and observe and do nothing. As the bubbles roll, the residual powdered sugar will gradually melt and the solution will become very clear. Note that the whole process needs to be kept in a medium-to-high fire, and violent tumbling bubbles can hinder the formation of crystal particles, just like flowing water is better than still water.
5. When the syrup is found to be slightly yellow, or when a small amount of syrup is stuck with chopsticks and cooled in water, it tastes crisp and does not stick to teeth, immediately remove the pot from the fire. Tilt the sugar pan, hold the bamboo stick in one hand, and quickly rotate the fruit in the syrup so that its surface is evenly coated with syrup.
6. Traditionally, the sugar-coated haws are cooled on the pervious wooden board, but this will form a flat plane at the bottom. If you don't like it, you can hang one end of Sugar-Coated Berry for cooling, so that there will be no flat phenomenon, but it is possible to grow a "pigtail".
