Main ingredients: appropriate amounts of dried chili peppers, oil, and onions.
Accessories: appropriate amounts of fennel, cloves, star anise, sesame, ginger, garlic, and salt.
Method
1. Peel off the dirty outer skin of the onion, cut off the head and tail, and then cut into large pieces.
2. Put oil in the pot, add ginger and garlic and sauté until fragrant.
3. Put the peppers into a blender and smash them. It is best to use several kinds of peppers.
4. Take out the ginger and garlic, add onions, and fry over high heat until the aroma is released. Halfway through frying, add the star anise, cumin, and cloves.
5. After the flavor of the spices is fried, filter out the residue in the pot.
6. Add the sesame seeds to the crushed chili peppers and mix well.
7. Turn the oil pan to medium heat. When the oil is not as hot as before, add the chili powder and stir-fry a little.
8. Finally add salt, put it in a sealed jar and wait for two days before eating it.
