The practice of stinky tofu
1. Cut the tofu into cubes with a thickness of 1~ 1.5 cm (don't cut it too thin, it will be too dry after frying).
2. If there is too much water in the sliced tofu, it is best to put it flat on the chopping board to dry for a while.
3. Take a container and put two pieces of stinky tofu, which can be of any brand. I use stinky tofu, a specialty of Kedong in Northeast China, and each piece in the box is individually vacuum-packed.
4. Put 3~4 spoonfuls of warm water into it, crush it and stir it into stinky tofu juice.
5. Put the tofu block into a clean container and pour the mixed stinky tofu juice into the tofu. I put the tofu blocks directly into the stinky tofu juice and mix them well, but be sure to mix them gently so as not to break them.
6. Marinate the tofu for 20 minutes before frying. The longer the marinating time, the stronger the taste. You can marinate it in a container with a sealed cover and store it in the refrigerator for a long time.
7. Before frying stinky tofu, adjust the sauce for frying stinky tofu: put sesame sauce 1 5g, garlic hot sauce15g, chili oil1tablespoon, boxed or bottled stinky tofu15g (half a block) into a bowl, crush and mix well, and if it is too dry, put a proper amount.
8. Before frying stinky tofu, you should also make the dip of fried stinky tofu: peel the fried (or roasted and fried) peanuts and put them on the chopping board, then add the cooked sesame seeds, and roll them into powder with a rolling pin. It doesn't matter if there are some fine particles.
9. Put the peanut and sesame powder into the dish, then add the cumin powder and Chili powder and mix well.
10. Heat the vegetable oil in a clean pot (the stinky tofu will form dense bubbles around when it is put in), fry the pickled stinky tofu piece by piece in medium and small fire until both sides are golden, and take out the oil control when the shell is crisp. If you put less oil in the pot, you can fry it in several times, because the oil after frying stinky tofu has a taste and can't be used for other things, so you will waste more oil. Don't use frying, as the fried stinky tofu can't be crispy outside and tender inside.

Put the fried stinky tofu on two bamboo sticks with chopsticks while it is hot, and then brush both sides with the sauce (50 grams of fried peanuts, 20 grams of fried sesame seeds, 8 grams of cumin powder and Chili powder according to your own preferences); You don't have to wear bamboo sticks to eat at home, just fry them and put them in the plate piece by piece.
12. Then dip peanut, sesame and cumin mixed powder on both sides of the dip pan and eat.
