The potato chips do have potato in them, but the potato is in the form of mashed potatoes. It's not what you'd expect from a potato chip!
1. Mashed potatoes are 1/3 water and 2/3 potato flour. Add a little extra cornstarch to mix it up. The cornstarch serves the purpose of not crumbling easily during the frying process and adds a crunchy texture.
2. Roll the mashed potatoes in a roughly 4-ton machine to make a giant mashed potato cake. Then use an oval mold to cut out shapes from the mashed potatoes.
3. A separate line takes away the excess mashed potato scraps in order to give the mashed potatoes a clearer shape. The rest of the crispy mashed potato patties are sent to frying and bending!
4. The mashed potato cakes are fried in hot oil at 190 degrees for 11 seconds before being removed from the pan. Then they go through a blower to blow off the excess oil from the chips and are served with a variety of flavored condiments.
5. Finally poured into the potato chip bucket, the interesting thing is that there is a machine under the potato chip bucket has been shaking until the gap of the potato chips is reduced to a minimum. Then the lid is put on and a bottle of chips is created!
