Sticky rice 350g

Red bean paste 250g

Glutinous rice washed and soaked for 4 hours on the steamer, the water boiled and steamed over high heat for 30 minutes. About 20 minutes or so, you can open the lid and drizzle some more water on the glutinous rice. To ensure that the most surface of the rice is also moist and soft.

Pour the rice into a large mixing bowl and mix in the pork and sugar while it's still hot. If you're a bit more particular, you can use powdered icing sugar instead of sugar. The subtle taste difference, of course, is not that noticeable.

Cover with another dollop of sticky rice and press it down with your hands.

If you're going to eat it straight away, steam it in a steamer basket over high heat for 10 minutes, then invert it and it's ready. If you want to store it in the fridge, wrap it in plastic wrap, shape it slightly with your hands, and put it in the freezer.
