First, the practice of cold rice noodles
1. Make dough with refined flour, wake up 10 minutes.

5. Spread out in the basin.
6. Leave the facial cleanser for 3 to 5 hours.
7. Pour out the clear water on the upper layer of washing water and keep the slurry on the lower layer.
8. Steaming gluten in a steamer 10 minute.
9. Steam and cut into pieces.
10. Pour the flour paste water into a flat-bottomed stainless steel plate and cook it in a hot water pot for two minutes. Take the plate with a transparent surface and put it in cold water to peel off the lower skin.

Second, the practice of refreshing cold noodles
Slice cold rice noodles, slice gluten, shred cucumber, mince coriander, mince garlic and slice garlic.
Take a pot, pour appropriate amount of water to boil, add bean sprouts, add a little oil, cook and take out the pot for later use.
Boil the water that has just been soaked in bean sprouts, add vinegar, sugar, star anise, fragrant leaves, garlic slices, ginger slices, pepper and fennel into the pot and simmer for/kloc-0.5 minutes, then add water and starch to thicken, and filter after boiling.
Add sesame oil to sesame paste and mix well.
Put the cut cold noodles in a bowl, spread gluten, minced garlic, shredded cucumber and bean sprouts and pour the sesame sauce.
Finally, pour the cooked sauce and sprinkle with coriander.
Third, shredded pork cold rice noodles
1. Make cold rice noodles in advance. Use flour (refined flour) to make a paste, not too thin, stir it evenly, and pour it into a flow. Prepare a stainless steel flat plate (I used a large one).
2. Add water to the pot to boil, pour the flour paste into a flat plate and spread a thin layer, put the flat plate into the boiling pot, and take it out for cooling 2 minutes after the skin changes color. Because the hot plate is washed by cold water, the skin is completely peeled off and soaked in cold water.
3. By analogy, I made three pieces of dough and finally cut them into long strips for later use.
4. Add a little oil to the pot. After the oil is boiled, add shredded pork and slip it. Add chopped green onion, Weidamei and salt in turn, then add shredded cucumber and fry until it is cut off. Pour these dishes into the dough and mix well.
5. Finally, add proper amount of vinegar, sugar, red oil, broth essence or chicken essence, and stir well.
