1. Peel the potatoes and wash them with the beans, drain the beans and place them in the potatoes and cut them into cubes; wash the meat with cool water for 2-3 times, and then cut them into cubes after the blood is cleaned; cut the green onions into slices, and slice the ginger into julienne strips.
2. Turn on the gas stove to high heat, pan hot, add 80 ml of soybean oil, until the oil boils into the meat stir fry until white; then into the green onion slices, ginger and pepper, stir fry quickly until uniform.
3. Add the string beans to the pot and reduce the heat to medium. Stir-fry the string beans until they start to turn green, then add the chopped potatoes to the pot and continue to stir-fry until all the string beans turn green.
Turn the gas stove to high heat, pour in water (just enough to cover the string beans), sprinkle in 8 grams of salt, and then turn with a spatula 2-4 times so that the salty flavor can be evenly distributed among the vegetables.
Cover the pot and simmer over high heat. When the pot opens for the first time in about 3 minutes, use the spatula to turn the vegetables at the bottom of the pot onto the top; continue to cover the pot and open the pot for the second time in about 2 minutes, then turn the vegetables the same way as the last time.
Cover the pot and reduce the heat to medium and simmer (no more turning of the vegetables in the middle), and wait 10 minutes or so for the soup to dry up some can be removed from the pot.
