What is rock sugar made of?

Rock sugar is made from white sugar as raw material. White sugar and water are stirred and dissolved to form a sugar liquid, which is then purified, recrystallized and other production processes. The specific five parts are: 1. Syrup concentration, 2. Rock sugar crystallization, 3. Slurry control, 4. Drying, 5. Packaging.

1. Syrup concentration

The syrup mother liquor used to make rock sugar is injected into the evaporation tank, and 0.3Mpa saturated steam is introduced to evaporate and concentrate the syrup with a boiling point in the range of 112 to 114°C. , when the syrup reaches 82 to 84°Bx after the water evaporates, the concentration process ends.

2. Rock sugar crystallization

The syrup in the evaporator is at a temperature of 112°C and is injected through the pipeline by pressure and placed in the crystallization chamber. The crystallization chamber is equipped with steam heating The temperature controller, heater, thermometer and hygrometer are used to control the temperature and humidity in the room during the crystallization period. The temperature is maintained at 70 to 80°C and the relative humidity is maintained at 80 for one or two days. The temperature remained at 65 to 70°C and the relative humidity was 70 on the third and fourth days. On the fifth and sixth days, the temperature remains at 55 to 65°C and the relative humidity is 60 to 65.

On the seventh and eighth days, the temperature remains at 40 to 5O℃ and the relative humidity is about 50. On the ninth day, open the door of the crystallization chamber, lower the humidity and temperature, and then leave the room to control the slurry.

3. Slurry control

Concentrate the rock sugar mother liquor in the barrel into the mother liquor storage tank, and then pump it to the syrup storage tank in the yellow sugar workshop for boiling sugar; The crystallized rock sugar and the remaining small amount of mother liquor in the barrel are placed upside down on the grid of the empty slurry tank, and the mother liquor in the rock sugar is drained and recycled; depending on the specific situation, it is decided whether to spray warm water to wash the mother liquor on the crystal surface.

4. Drying

Put the rock sugar in the barrel into the drying tray and properly crush the rock sugar crystals manually. There is a quality difference between the rock sugar in the middle and the bottom of the crystallization barrel, so it needs to be carried out After manual sorting, the drying trays of qualified rock sugar are sent to the tunnel dryer, where they are forced to dry by being blown by the hot air of the blower and the moisture extracted by the induced draft fan.

5. Packaging

The dried rock sugar is transported to the packaging room for packaging.
