2. Complete oxidation. Red wine that has just been opened will have a sour taste, and after contacting with air for a period of time, it will make the tannins of the wine soft and smooth.
3. It smells terrible. Sulfur dioxide will be added to red wine, which can volatilize the smell of sulfur dioxide and give off the fruity aroma of wine.
However, not all red wines need to sober up. For example, fresh wine that has not been aged in oak barrels can be directly opened for drinking and enjoy the flavor brought by red wine.
In addition, most white wines and pink wines can also omit this step of sobering up.
