1, chicken breast is degreased, cut into large pieces along the grain, put into the pot with clear water, add onion and ginger, and add a spoonful of cooking wine.

2. Boil over high heat, cover and turn to low heat and continue to cook for 20 minutes. Cook the chicken pieces until cooked, remove them and let them cool.

3. Put the cooled chicken pieces into a fresh-keeping bag, break the meat up with a rolling pin, and then tear it into smaller pieces along the grain by hand.

4. No need to put oil in the non-stick pan, directly pour the shredded chicken, add two spoons of braised soy sauce and one spoonful of white sugar and stir fry until the shredded chicken is 80% dry.

5. Pour the fried shredded chicken into high-speed blender and beat 1 min, so that the shredded chicken will be more fluffy. You can add some shredded seaweed and cooked sesame seeds. If there is no high-speed blender, you can rub it back and forth with your hands and rub the shredded pork into a fluffy state.

6. Pour the beaten chicken floss into the pot again, stir-fry until there is no water at all, and the completely dry floss can be beneficial to storage.
