1. Remove the skin from the white lotus root
2. Cut it into pieces of the right size
3. Slice the ginger, cut the pork into chunks
4. Cut the mushrooms into chunks, and prepare a proper amount of icing sugar
5. Put a little oil in the bottom of the pan and stir-fry the pork and the ginger slices to force out all of the oil from the meat. Add the sugar and let it melt
7. Add some cooking wine to take away the fishy smell of the pork, and add some dark soy sauce for coloring, and remember to add a little hot water to prevent the bottom of the pot from getting muddy
8. Add the lotus root pieces, and stir-fry them well
9. Put in the water, and make it flush with the ingredients
10. Put in the mushrooms and 1 teaspoon of salt, and simmer for 40 to 40 minutes. Salt and simmer for 40 to 50 minutes!
