Even if there is no professional bean baking machine, it can be baked easily and simply at home. Although it is not as uniform in quality and difficult to adjust the taste as the beans baked by commercial bean dryers, it has the advantage of observing the baking process and tasting the finished products baked by yourself. And if you master the trick, you can sometimes bake coffee beans with quite good taste. The simplest tool is the hand net, and a small hand-cranked bean baking machine or household electric bean baking machine is often used.
The benefits of hand-net baking
Hand-net baking is the most commonly used method for people who bake at home. As long as you spend low cost and practice hard, you can bake and get quite good finished products. There are also hand nets specially designed for baking beans on the Internet, and the net part is integrated with the handle. Relatively speaking, the price of props is cheap, and the firepower can be adjusted intuitively. In addition, you can observe the changing process of beans with your eyes and bake them, so it is very suitable for practicing baking beans.
Disadvantages of hand-net baking
In the process of shaking on the fire, the hand net will easily deviate from the flame position and be affected by the surrounding air flow, so it is difficult to heat the beans stably. And beans may not swell, and appear astringent or bitter. It is difficult to make the beans taste better because the hand-net-baked beans can't provide heat stably. And because it depends entirely on the feelings of the baker, it is difficult to get the same result every time.
The variation of hand-net baking
Although there is a difficult boundary, as long as several variables are well adjusted, good results can still be obtained. When baking beans by hand net, the state, quantity, time, flame size and height of hand net are all important variables. If these variables are different in each baking, the results will be different each time; Therefore, efforts must be made to reduce these variables as much as possible to achieve similar results. First of all, prepare a certain amount of raw beans according to the size of the hand net, because the water content and size of raw beans are not determined by individuals, so it is enough to regard this as the original characteristics of raw beans.
Although it is necessary to adjust the bean baking time according to the state of raw beans, at the beginning, it is suggested that the time from homogenization, first explosion and second explosion can be set first, and only the bean planting time (the time of baking end) can be adjusted. Baking according to the pre-specified time can develop the feel of fire adjustment, so it is better to set the time and bake within this time when you try hand-net baking at first.
Firepower adjustment
Firepower adjustment is the most difficult part when baking the hand net. There are two ways to adjust the firepower: the height from the fire source or the size of the flame; According to the difference between the two, the results will also be greatly different. If possible, try to fix one of the conditions. For example, "Homogenize at about 40cm above the fire source 10 minute, and heat at 20cm above the fire source for 5 minutes", if recorded like this, the possibility of obtaining the finished product with the same taste again will become higher.
Heat source of hand-net baking
When baking at home, in order not to make it difficult to clean the falling silver skin, a cassette gas stove is used. However, the fuel bottle capacity of the cassette gas stove is small, and if the baking time is long, the gas will be used up or cooled down. Therefore, the flame may become smaller in the middle of baking, and it is often difficult to heat raw beans stably. Therefore, it is necessary to carefully observe the state of the flame and adjust the flame size accordingly.
It is recommended not to use the biggest fire as much as possible. Compared with gas stoves using liquefied petroleum gas (LPG) or liquefied natural gas (LNG), there will not be much problem. However, if it is a portable cassette gas stove, the internal pressure may be lowered due to the cold of the gas tank in the middle, which will make the flame of the biggest fire smaller. Therefore, the flame can be divided into four equal parts, and three-quarters of the flame can be set as the maximum firepower, and four-quarters of 1 can be set as the minimum firepower. If this is set, even if the gas pressure is slightly reduced in the middle, it will not have much impact on the maximum firepower set by itself. Just decide the size of the fire in this way and adjust the fire according to your own style to bake.
