The second step?
Put the glass on the stage, hold the glass body or press the bottom of the glass, and shake the glass counterclockwise. The wine in the glass shakes higher and higher, and almost stops at the edge of the glass. Note that there is a thin layer of wine on the wall of the cup, which flows down slowly and brings out irregular traces. This is the so-called "wine mark" of wine. Its length is directly proportional to the alcohol concentration of the wine.
The third step is to smell

The fourth step is to taste
Take a sip. When you sip the wine, don't swallow it in a hurry. Hold the wine in your mouth for a while, take a breath, let the wine spread to all parts of your mouth, and let the whole tongue, up and down, front and back, left and right, and the whole mouth, jaw and jaw fully contact with the wine to feel the acidity, sweetness, bitterness, astringency, lightness, thickness, balance and coordination before swallowing it.
