How to stir-fry pork liver with ginger and onion?
Slice pork liver and rinse it with running water for 10 minute until the water becomes clear and there is no blood.
Put the pig liver in clean water, add 3 tablespoons of white vinegar to soak it for 15 minutes, and then rinse it with flowing water for 10 minutes until all the blood foam is washed away.
Drain the pork liver, add appropriate amount of salt and 1 teaspoon of raw flour, mix well and marinate for 10 minute.
Take a bowl, add 1 tablespoon water starch, 1 tablespoon light soy sauce, a little white sugar, a little white pepper, 1 teaspoon cooking wine and a little sesame oil, mix well, and make into a sauce.
Heat the oil pan, when the oil is 70% hot, add the pork liver and fry until it becomes discolored, and then remove it for later use.
Heat oil pan, saute shallots, ginger and garlic, add pork liver and stir well. Pour in the prepared sauce, add half a bowl of boiling water and stir-fry, cover and stew for 30 seconds, then stir-fry quickly.
