1. Ingredients: 1000 grams of ribs, 3 (small) potatoes, appropriate amount of cabbage, a small piece of tofu, and appropriate amount of vermicelli.
2. Accessories: 1 can of dark beer, appropriate amount of vinegar, appropriate amount of light soy sauce, appropriate amount of dark soy sauce, appropriate amount of dried chili, a little rock sugar, appropriate amount of green onion, 3 or 4 garlic cloves, a little ginger slices, aniseed 3 or 4 pieces, a pinch of Sichuan peppercorns.
3. Method: Wash the ribs with clean water and blanch them in a pot under cold water. While blanching, prepare the seasoning.
4. After taking a "hot bath", remove the ribs and rinse them with water.
5. First stir-fry the pork ribs in the pot and add various prepared seasonings.
6. After the ribs are fried and colored, add a can of dark beer. There is no need to add more water when the beer is added. After the pot is boiled, simmer on low heat for one and a half hours.
7. While the ribs are stewing, start preparing the side dishes: dice garlic sprouts; soak vermicelli in warm water; cut tofu and cabbage into cubes; cut potatoes into cubes. When the time is up, the soup of the pork ribs is almost gone. Add potatoes, tofu and cabbage. Don't be afraid of burning the pot, because the cabbage will come out of soup after a while. Start adding salt now. If you add salt in advance, the pork ribs will not be simmered.
8. When the vegetables are almost cooked, add vermicelli and simmer for a while. When it is out of the pot, add garlic sprouts and turn off the heat.
