Noodles with Soy Bean Paste, Beijing Style

Ingredients: handmade noodles 250g, pork belly 150g, cucumber 100g, water-soaked soybean 100g, Toona sinensis 1 small stick, bean sprouts 200g, half radish, Chinese cabbage 200g, garlic 3 petals, shallots 3 and green onions.

3. Cut the pork belly into 0.5 cm square dices. Pour oil into the pot and add star anise to stir fry until fragrant.

4. Add the diced pork belly, cook the cooking wine, then stir-fry until the diced pork belly changes color, add the diluted sauce, turn the pot to low heat, simmer until the sauce is thick, then add sugar and turn off the heat.

5. Turn off the fire and add chopped green onion and mix well.

6. Pour water into the soup pot, and cook the noodles with high fire. When the noodles are cooked until there is no hard heart, remove the cold water, drain the water, and pour in the fried sauce.
