Chicken whites are egg whites.
Egg white refers to the egg yolk wrapped around it. A transparent gelatinous substance composed of proteins. Therefore, it is also called albumen, opposite to egg yolk. The egg white solidifies into a white solid when exposed to heat, hence its name. Protein, like amniotic fluid in mammals, has shock-proof, moisturizing and protective effects. If you use a high-speed whisk to stir the egg whites, they will become foamy and elastic like sponge, which is the first step in making cakes.
Chicken white contains very little lipids, but there are also trace amounts of fat, traces of lecithin, cholesterol and the fat-soluble pigment lutein.
The protein of chicken white is excellent in nutrition because it contains all the essential amino acids.
Chicken egg white is made by cracking one end of the eggshell to let the egg white flow out and collect it for raw use, or boil the egg and get the protein for use. The egg white of many birds is rich in protease inhibitors. Of the chicken ovalbumin isolated from eggs, only the peak II protein has a strong inhibitory effect on trypsin among the eluted peak proteins. It is a chicken ovalbumin trypsin inhibitor. Further studies have shown that the inhibitor has high thermal stability, with 90% inhibitory effect when incubated at 80°C for 15 minutes, and its inhibitory effect is reduced to 20% at 95°C.
To treat burns, sterilize fresh eggs in 75% alcohol for 15 minutes. Make a small hole at both ends of the egg according to aseptic procedures to allow the egg white to flow into the sterilized bowl (preparation time). After the wound has been debrided (if there are blisters, they should be cut off), then use a sterilized cotton ball dipped in egg white solution to apply it 2 to 3 times on the first day. Generally, a light yellow scab will form on the wound surface within 6 to 15 hours. At this time, the pain will be relieved and the leakage of body fluids will stop or decrease. If the scab film is not completely formed or there are cracks, apply egg white liquid again until the scab film is completely formed.
