How to Make Cranberry Cookies ?
Weigh all the ingredients, milk powder can be weighed in a container with low gluten flour and mixed in advance; butter should also be prepared in advance and softened at room temperature.
After the butter is softened, add the powdered sugar and mix well. There is no need to whip.
The state of the mixing is as shown in the picture, you can't see the powdered sugar particles, just mix well.
Add the whole egg mixture and mix well. It is recommended to add the egg mixture in 3~4 times, and mix well after each addition before adding the remaining egg mixture.
After adding the egg mixture and mixing well, the state is as shown in the picture. Don't let the egg and oil separate from each other.
Add the vanilla extract and mix well.
Pour in the pre-measured and mixed milk powder and low gluten flour without sifting.
With a spatula, stir the powder with the butter paste.
Mix until there is no dry powder and the mixture is doughy.
Pour in the dried cranberries. If the cranberry particles are large or stick to each other, you can break them with your hands, you should not break them too much, it will affect the texture.
Toss the dough with a spatula to evenly distribute the dried cranberries into the dough.
Divide the dough into four equal portions, and shape each portion into a 4-cm rectangle, or roll it into a cylinder.
Slice the dough into 0.7cm thick slices with a knife, place the slices on a baking sheet, and bake in a preheated oven.
Bake until the top is lightly golden brown, and keep an eye on the sides of the oven during the last few minutes of baking to avoid over-coloring.
