method of work

2. Put rice flour and black rice flour into bowls respectively, add 20g white sugar, 2g yeast and 175g water into each bowl, and stir evenly.

Tips

2. After fermentation, add a little baking powder to make it taste better.

Third, soft and sweet-Redmi hair cake

Red rice flour 160ml (you can buy Redmi and grind it into powder with a blender), flour 160ml, water 150ml, sugar 40ml and yeast powder1g.
method of work
Pour the rice flour and sugar into a bowl and mix well. Dissolve the yeast powder in water.
Pour the yeast liquid into the flour, then pour the water in and stir well for a while, so that the flour can fully absorb the water, and then cover it (the lunch box I use) and put it in the rice cooker for fermentation (just add a little water to the rice cooker and heat it to a temperature that is not hot).
When the fermentation is twice as large (about two or three hours), stir it again, which will make it softer. Then put it in the rice cooker for fermentation. If the middle rice cooker is not warm, you can reheat it with a heat preservation gear, and be careful not to burn the yeast for too long.
When it is twice as big as it is (about two hours, it can be sent longer), put a wet and oiled gauze on the steaming grid, pour the rice batter into something like sprinkling a little red dates, raisins, wolfberry and walnuts, cover it and steam for 40-50 minutes.
Tips
Redmi, also known as blood glutinous rice and red glutinous rice, is a good blood tonic.
You can also change Redmi into purple rice, millet, etc. The water content of purple rice cake should be more, and there should be no problem within 200ML.
