2. Turn down the fire after it is boiled; Cover and cook for about 20 minutes, or until the rice is soft and sticky, the water is absorbed and the rice is cooked. Remove the pot from the fire. Let the rice cool, so cold that it won't burn your hands. Set aside for later use.
3. In a small seasoning pot, add rice vinegar, oil, sugar and salt, and heat it with medium heat until the sugar dissolves. Let the mixture cool. Then stir it into the rice and mix well. When you just pour in the mixture, the rice looks very wet. Stir the rice constantly, and it will look dry when it cools.
