Surimi. Crab sticks, also known as crab foot sticks, simulated crab meat, and crab-flavored fish cakes, are traditional products of surimi processing. Crab sticks simulate the texture and flavor of Alaskan snow crab legs. The meat is firm and tough, and has a salty and slightly sweet seafood flavor, which is very simulated. It is a surimi product (also called marine bionic food).
