yam is the best ingredient for duck stew.
ingredients: an old duck, 3g of yam, 1 bottle of beer, 1g of ginger, a little salt and 5g of onion.
1. Clean the old duck first, then chop it into two halves, then soak it in clear water, then wash it and drain it.
2. Prepare beer, peel and slice ginger, wash shallots and cut into sections.
3. Pour clear water into the pot, put the duck in the pot with cold water, blanch it, then scoop it up and rinse it.
4. Take another soup pot, add the duck, pour a bottle of beer, then pour clear water, with more water, then add ginger and shallots, cover with high fire and bring to a boil, then simmer for about 1 hour.
5. After an hour, peel the yam, wash it and cut it into hob pieces. Wash the shallots and cut them into chopped green onion. The yam will turn black after peeling, so wait until it is time to put it into the pot, wash it and put it directly into the pot, which can save the step of soaking in clear water.
6. Turn to high fire, add yam to boil, then turn to low fire, cover and cook until yam is tender.
7. Add salt to taste, then turn off the fire and take out the pot.
8. Serve in a bowl and sprinkle with chopped green onion.
