Step 1: Choose beef tenderloin for steak. It tastes tender and tastes better. First, cut beef tenderloin into pieces with a thickness of 1 cm along the grain.
Step 2: Marinate the cut steak, add a proper amount of black pepper, salt suitable for your taste, two spoonfuls of white sugar for freshness, a proper amount of oyster sauce, a proper amount of cooking wine, and a proper amount of soy sauce, then add an egg white, grab it evenly by hand, and then add a spoonful of cassava starch. The purpose of adding starch is to make beef taste tender and smooth. Grasp it evenly by hand again, then add a layer of cooking oil, lock the moisture in the beef and marinate it for two hours to make the beef more tasty.
The third step, two hours later, the beef is marinated and we begin to make it. You can use a pan or an electric baking pan to fry steak. Burn the pan to the hottest, put the cows in, and you can hear the sizzling sound. When frying, turn on a small fire and press the beef with a clip, so that it will be fried more evenly. After half a minute, turn the beef over and start frying the other side. Fry the steak for another half minute, then turn it over for the second time. In this way, the steak is medium-rare. If you like to eat medium-rare steak, you can take it out of the pan and put it on the plate. If you want to eat medium-rare steak, turn it over for the third time, fry it for another half minute, and then take it out of the pan and put it on the plate.
