Traditionally, Poon Choi is served in wooden or antimony pots. Poon Choi feasts are held in villages in the New Territories on festive occasions, such as the opening of a new home, the opening of an ancestral hall or the lighting of lanterns in the New Year.
The ingredients of Poon Choi are not specified, but generally include radish, bamboo, squid, pork rind, mushrooms, chicken, pangolin balls and braised pork, and many of the Poon Choi dishes may even include dried flowers, prawns, hairy vegetables, oysters and dried eels, etc. Among them, braised pork is the most important part of the whole dish. Among them, braised pork is the essence of the whole Poon Choi, and it is also the most laborious to make.
