Steps:
Fresh green pepper, remove bad, dry, etc. , put the good aside for use;
Green pepper can be selected according to the degree of spicy taste. This kind of Hangzhou pepper I chose is spicy.
Wash them with clean water, preferably one by one;
Because you can eat it directly when it is ready, after all, it is for yourself, so it is better to clean it up.
Cut off the stems of green peppers, and don't cut them, or pickled peppers will easily spoil your stomach.
Put the chopped green peppers aside for later use.
Prepare a clean glass bottle and put all the green peppers in it, preferably vertically, so as not to crush them.
Add purified water to the bottle mouth, if there is rice wine, reserve a quantity for rice wine, and fill it up if there is no rice wine.
Add 1-2 teaspoons of rice wine and vinegar.
Add 1 tbsp salt.
Seal it with a fresh-keeping bag and squeeze out the air inside.
Cover the bottle cap to ensure sealing;
Place it on a window sill or indoors, and keep the temperature at about 20-30 degrees. If the room is cold, you can cover it with something.
Three days later, the color of the green pepper turned yellow, indicating that the pepper was sour.
It is sour quickly in summer, but it will be sour in a day or two, and it will last longer in winter, as long as it turns yellow.
Open the lid and skim off the foam, and the delicious sour pepper at home is successful.
You can take it out and put it in the refrigerator, or you can seal it in a bottle and use it when you eat it.
