Step one:
First, spread three or four layers of hemp leaves on the board, then break the steamed bread and put it on the hemp leaves, cover it with a quilt for three or four days, and open the quilt after smelling a heavy musty smell, and you will find a layer of mold on the steamed bun.
Step two:
Take out the steamed bread when it produces black hair, dry it in the sun and then sweep it off. Then break the steamed bread into about the size of a dollar coin.
Step 3:
Pour the steamed bread into the pot, put the spices such as pepper and fennel into it, boil for half an hour, take it out and let it cool, then pour the pepper water into the jar, add the cold boiled water and salt, stir it repeatedly into a paste, put it into the seasoning bag and seal it.
Step 4:
Put it in a place with strong sunlight for exposure and fermentation. Stir the flour paste once every morning and evening, and keep it from rain in rainy days, otherwise the flour paste will go bad.
