How to make homemade plum jam ?
Wash, peel and pit the plums and cut into chunks
Add the sugar and lemon juice and mix well
Seal the cling film and place in the fridge overnight
Remove the plums and pour them all into a casserole dish or non-stick frying pan
These are brought to the boil over a high heat, stirring gently. Continue to cook over high heat for about 5 minutes
Skim off the bits from time to time
Skim off the foam and turn down the heat to medium-low and simmer, stirring carefully to avoid a mushy bottom. Stir until you feel resistance and the jam thickens and becomes glossy
Remove from the heat
Put the jam into sterilized jars before it cools to 85 degrees, and then invert until chilled
