2. Wipe away the dirty things in the small intestine by hand, and then remove a large piece of fatty oil on the surface of the small intestine, but don't remove it too cleanly. It should be better to use some oil in the small intestine.
3. Prepare a basin of warm water, scald the whole pig small intestine with hot water, and then take it out.
4. Turn the opening at one end of the small intestine outwards a little, and press the opening end against the chopsticks. 8. Add a proper amount of water to the pot, add a few slices of ginger and a little cooking wine, and boil. Boil the water and put it into the small intestine. Stir with chopsticks to prevent the pan from sticking. Blanch with water until the small intestine becomes discolored. Long about 2 minutes. Then take out the small intestine, rinse it with clear water, and drain the water for later use.
