How to make shredded pork stir-fried in sauce?
Cut the pork into shreds and put it in a bowl. Add soy sauce, cooking wine, starch and eggs, mix well and make a paste.
Cut the ginger into rice and shred the green onion. Soak in water for ten minutes, drain and spread out on a plate.
Place the noodle sauce, sugar, cooking wine, MSG, pepper, ginger, sesame oil, and wet starch in a bowl to make a seasoned gravy.
Add oil to a clean pan and heat it to 60% heat. Pour the shredded pork into the smooth and drained oil.
Heat the oil in the original pot and add the seasoned gravy. When the sauce is thick, pour in the shredded pork, stir evenly, take it out of the pot and serve on top of the shredded green onions.
Tips
1. The shredded meat should be even in thickness and not too thin.
2. The sizing should be moderate, and neither starch nor eggs should be too much, otherwise it will be difficult to spread.
