Claws, heads and shrimp lines are removed from crayfish, and shrimp yellow is squeezed out of another bowl for later use. After that, under running water, remove the cheek tissue, rinse one by one with a brush, and rinse the shrimp yellow several times. Wash and drain for later use. As shown in the figure.

Chop onion and ginger, slice garlic, cut dried pepper into sections, and leave a few garlic cloves for later use. Wash the green pepper and cut it into pieces, because it can be cut wider as a side dish.

On a big fire, pour in a proper amount of rapeseed oil (rapeseed oil squeezed by my parents, I prefer it), and add onions, ginger and dried peppers to stir fry until fragrant.

Stir-fry crayfish, cook a little white wine in the middle to remove fishy smell, stir-fry for a while, pour in clear water (just above the surface of lobster), pour in shrimp yellow, add 1~2 spoonfuls of white sugar (adjusted according to personal taste), cover and cook.

10 minutes later, add green pepper and garlic and continue cooking. When the soup is almost absorbed, add a proper amount of salt (if you are not sure, you can taste it while putting it, which suits your taste), a spoonful of oyster sauce, stir fry for a while, and put it on the plate. Let's call it a day. It is better to soak rice in soup.

Crayfish like to grow in dirty places, so it must be cleaned and cooked when eating. Although the whole cleaning process is troublesome, I think the trouble of eating it again is worth it. The whole process only uses a small amount of white wine, sugar, salt and oyster sauce, which is relatively healthy.
