1. Ingredients: 75g pork elbow.
2. Seasoning: 5g salt, 15g ginger, 15g scallion, 15g watercress, 8g corn starch, 8g soy sauce, 8g vinegar and 3g peanut oil.
3. Scrape and wash the pig's elbow and stew it over a small fire.
4. Cut the stewed elbow into 2cm cubes and chop the watercress.
5. Chop the ginger and cut the onion into chopped green onion.
6. Add water to the starch bowl to prepare wet starch for later use.
7. Put the wok on a high fire, add the mixed oil to heat it to 5%, add Jiang Mo, chopped green onion, soy sauce and salt, add 2ml of soup, put the elbow and stir well.
8. Color the elbow to taste, thicken it with wet starch, add vinegar, stir well, and serve.
