Direct Responsibilities:
1. Attend the kitchen department's daily morning meeting, record the contents, submit the department's work report, report on the food situation and guest complaints and requests.
2. Maintain a friendly, cordial and neat professional appearance in front of guests.
3. Assist the Executive Chef in developing the Western Restaurant menu, kitchen menu and food prices.
4. Assign work tasks, arrange work details, and give guidance and supervision to staff work.
5. Arranging the work schedule of the kitchen staff to ensure the rational use of manpower, and arranging overtime work for the staff when necessary.
6. Supervise and inspect personal hygiene and labor discipline of employees.
7. Assist the Executive Chef in checking the quality of food, formulating raw material purchasing plans, and ensuring that all raw materials are not wasted or damaged in the process of use.
8. Be fully responsible for the normal use, cleaning and maintenance of tools, equipment and facilities within the jurisdiction, as well as the cleanliness and hygiene of the work area.
9. Conduct regular performance evaluations of subordinates, recommend rewards and punishments to superiors, and implement technical training for cooks.
10. Ensure the quality of food production in the kitchen. Regularly check the flavor, color, required temperature and portions of dishes.
11. Checking of business operation and theoretical study of each post.
12. Correctly communicate the instructions of the Executive Chef.
13. Doing the horizontal contact with Western Restaurant, Purchasing Department, General Warehouse Department and Stewardship Department according to the working procedure, and making the definition request for the inter-departmental dispute in time.
14. Formulate the annual work objectives and work plan of the Western Kitchen, and make budget and monthly work plan according to the month, and submit it for approval and implementation.
15. Responsible for the development of Western kitchen procedures and rules and regulations, submitted for approval and implementation.
16. Develops job descriptions and defines scope of work for direct reports.
17. Receive the rationalization proposals reported by the direct subordinates, and deal with them according to the procedures.
18. Authorize direct subordinates.
19. Responsible for the training, implementation and inspection of the work procedures of the Western Kitchen Supervisor.
20. Develops training programs for Western Kitchen job skills and assists the Training Department in implementation and evaluation.
21. Inspect, supervise and check the work of subordinates.
22. Understand the work of the kitchen and related data.
23. Receive regular debriefings from direct subordinates and evaluate their work.
24 According to the work needs to deploy the direct subordinates of the work position, reported to the direct superior approval after the implementation of the transfer of human resources department for the record.
25. Fill in the direct subordinate fault list and reward list, according to the authority in accordance with the program.
