Homemade douchi method
Materials:
Appropriate amount of soybean, salt, chopped pepper, pepper noodles, pepper powder, Jiang Mo.
The practice of douchi:
1. Wash soybeans and soak them for about 8 hours.
2. Cook the soybeans, put the boiling water away, add a little salt, and store in the refrigerator.
3. Ferment soybeans in a warm place for about 3 days.
4. Add a little salt to the lobster sauce, then add chopped pepper, pepper noodles, pepper powder and Jiang Mo, and stir well.
5. Pour in the water for boiling beans and order some white wine.
6. Put the soybeans in the fresh-keeping box and put them in the refrigerator for about 7- 10 days, and the lobster sauce is ready.
Tips:
The fermentation time of soybean varies with temperature, generally 2-5 days.
