Methods/steps:
1. Prepare ingredients: small sea bass and mushrooms; Seasoning: ginger, onion, garlic, red pepper, sugar, salt, pepper noodles, chicken essence, starch and soy sauce.
2. Wash the onion and cut it into sections; Peel ginger and garlic and cut into thin slices; Wash the red pepper and cut it into 2 mm long rings.
3. Wash the shiitake mushrooms, remove a part of their pedicels and cut them into cubes of about 1 cm.
4. Clean the sea bass, cut both sides of the fish with a 4 cm long oblique knife, sprinkle salt and ginger rice evenly, taste it, and sprinkle it in the fish's stomach for 5 minutes.
5. Drain the water in the steamer, put it on the steamer, put the fish on the steamer, cover it, and steam over medium heat. Steam up, steam for 8 minutes, turn off the fire and stew for 2 minutes.
6. While steaming the fish, put the starch into a small bowl, add appropriate amount of water, about 50 ml, and mix well for later use.
7. While steaming the fish, use another pot, add cooking oil, heat, add ginger, red pepper and garlic and stir fry.
8. Add mushrooms, stir fry, add 200ml of water, add soy sauce, sugar and salt, mix well and cook for 5 minutes.
9. Turn off the heat, add the prepared starch, stir the juice quickly, and turn off the heat. Sprinkle with chopped green onion, pepper noodles, chicken essence and mix well, and the mushroom juice will be fine.
