Raw materials:
Rice flour, sugar, yeast powder, cooked sesame seeds.
Exercise:
1, rice flour (called sticky rice flour in some places), appropriate amount of sugar and cold water are mixed into a thin paste, and the ratio of flour to water is 1: 2.
2. Heat in water and keep stirring until the rice paste is granular. Don't heat it too dry, it is not easy to swell during fermentation, and the taste is dry and firm. )
3. Stir a little yeast powder with warm water. When the temperature of the rice paste is not too hot, mix the yeast water evenly and pour it into a container for sealed fermentation (I put it in a lunch box). If it is hot, it will take about five hours. When the volume of rice paste becomes larger and there are many fish blisters on the surface, it is basically ok.
4. Sprinkle cooked sesame seeds on the surface, put water on the pot and steam for 25-30 minutes.
It's best to eat this kind of cake now, and steam it, so it won't be so sweet next time.
The rice cake (this time it was too dry when steaming, so the finished product was very tight, so I just looked at it, hmm! )
