Generally, high-quality soybeans produced locally in Huizhou are used, which are as clear as jade and as delicate as pearls. Tofu made should be as clear as snow, cut as jade, and not spilled when it falls on the ground. After tofu is made, it should be cut into long strips according to the standard of length 12 cm, width 6 cm and thickness 3 cm, then soaked in raw squeezed water for several hours, then neatly stacked on the straw mat of the steamer, sprinkled with salt water, covered with gauze, covered with clean straw in winter, and then fermented indoors. After 3-5 days, a layer of long white slender hair grows all over the body.
According to the length and color of fluff, hairy tofu can be divided into four types: tiger hair, mouse hair, rabbit hair and cotton hair. This white fluff is made of fermented mold, so it is also called moldy tofu. During the fermentation of tofu, protein is decomposed into various amino acids, which is more delicious than ordinary tofu.
