Introduction to ham.
The origin of Jinhua ham is related to Zongze, a famous general who fought against the Jin Dynasty in the Song Dynasty. At that time, Zongze returned after defeating the Jin Dynasty. The villagers rushed to send pig legs back to Kaifeng to comfort the soldiers. Because of the long distance, the villagers scattered Pork legs are cured with salt for portability. The cured pork legs are red in color and are called ham.
Hou Zongze presented the "cured ham" to the court. When King Kang Zhao Gou saw the bright red meat, he was full of praise and named it "ham", which made the ham even more beautiful. And because Dongyang, Yiwu, Lanxi, Pujiang, Yongkang, Jinhua and other places during the Southern Song Dynasty were all under the jurisdiction of Jinhua Prefecture, the ham produced in these areas was collectively called Jinhua ham.
