Step 1: Don't rush to clean the fresh pig intestines after you buy them home. Put them in the refrigerator for about an hour before cleaning. It will be faster and more convenient to remove fat oil.
Step 2: Wipe off the dirt in the small intestine by hand, and then remove the large fat on the surface of the small intestine, but don't remove it too cleanly. It is better to bring some fat to the small intestine.
Step 3: Prepare a basin of warm water, scald the whole pig small intestine with hot water, and then take it out.
Step 4: Turn the opening at one end of the small intestine outward a little, and hold the opening against the chopsticks. Then, put the small intestine on the chopsticks along the chopsticks and draw it at one end of the chopsticks until the other end of the small intestine also passes through the head of the chopsticks.
Step 5: Pull the chopstick head at one end and the small intestine at the other. The hand holding chopsticks pulls in the opposite direction to the hand grasping the small intestine. After the chopsticks are pulled out, turn out the remaining small intestine until the small intestine is turned over.
Step 6: Wash the turned small intestine with warm water to remove dirt and some mucus. Then prepare a basin of clean warm water, add proper amount of vinegar, cooking wine and sweet potato powder (or flour), and fully knead it by hand, but this process should not be too long, and the sooner the better.
