Steps
1. Remove gills and guts of sea cucumber grouper, and wash it.
2. Blanch the fish in hot water to remove the stone scales on the surface of the skin.
3. Rinse well and set aside.
4. Heat the oil, add onion, ginger and garlic.
5. Add the sea cucumber and grouper.
6. High heat, successively cooking vinegar, cooking wine.
7. Add appropriate amount of soy sauce and then add water.
8. Boil, simmer for 5 minutes.
9. Add salt to taste, turn over and simmer for another 3 minutes.
10. Reduce the juice on high heat, then turn off the heat.
11. Out of the pot on a plate. Garnish and serve.
Tips
Sea cucumber grouper does not have fish scales, but there is a layer of granular stones on the surface of the skin, also known as stone scales, which must be scalded through to be removed
