Homemade sour plum sauce How to do?
Wash plums: Wash the plums with water and drain them.
Put salt: Sprinkle a few spoons of salt on the pickled plums, mix the salt evenly with your hands, and let the surface of each plum fully contact with the salt.
Let it stand: Mix well and let it stand until the skin of the plums shrinks and water comes out.
Wash: Pour away the water from the salting, and wash the plums with clean water to remove excess salt on the surface of the plums.
Cooking: Put the plums into the pot, add water to cover the plums, turn up the heat and cook until the plums are soft and translucent.
Water separation: After confirming that the plums are cooked soft, pour out all the water.
Pound the sauce: Adjust the heat to medium and use a spoon to crush the plums one by one (no need to discard the skin and core).
Collect the juice and add sugar: slowly reduce the juice to dryness over medium heat, stirring continuously during this period. When it becomes a sauce, add white sugar according to personal preference and stir until the sugar is evenly melted and then turn off the heat.
After the sauce cools down, put it into a glass jar and store it in the refrigerator~

The glass jar must be completely dry. There can't be water in it, otherwise it will be easy
