It is a local traditional food in Penglai District, Yantai City, Shandong Province.

Penglai noodles are a flavored noodle developed on the basis of Fushan Ramen.

The noodles are hand-pulled, locally known as "wrestling noodles", with thin and tough strips. The brine is made from real sea bream (commonly known as Jiaji fish) soup, an appropriate amount of mung bean starch is added, and it is served with soy sauce, Fungus, sesame oil, star anise, pepper and other seasonings, one or two per bowl, has a unique seafood flavor.
