Step 2: Select beans
When drying dried beans, choose fresh and tender beans that are firm, dark green, and thin. The dried beans made from old beans are not very good. Delicious, thick beans that are not easy to dry.
In addition, beans soaked in water by vendors cannot be used. You can buy a small amount of beans and let them sit for a day. If the beans are swollen and feel hollow when pinched, they are soaked beans. Soaked beans will wilt after being left out for a day.
Step 3: Clean the beans
Don’t choose the whole beans you bought, just rinse them with clean water. There is nothing to say about this step.
Step 4: Process the beans
There are two methods for processing the beans. One is to cut the raw beans and dry them directly, and the other is to boil the beans. Dry again.
The dried beans made from raw beans are green in color and taste closer to the taste of fresh beans. Dried beans made from boiled beans are brown in color and taste like prunes and beans.
1. How to deal with raw and dried beans
Put the washed dried beans aside to control the water, and dry them in the shade for a day to let the fresh beans wilt slightly. Such beans are tough and will not break easily when scratched with a razor blade. Then prepare an old-fashioned razor blade and use the blade to cut the beans in half from beginning to end, leaving about 1 centimeter in length at the end.
Beans cut in half are easier to dry, which can greatly shorten the drying time and retain more of the nutrients in the beans. At the same time, it also avoids drying for too long, which will cause It's cloudy and rainy.
If you don’t like to cut the beans, you can do it, but drying the whole beans will prolong the drying time.
2. What to do with boiled and dried beans?
Pour enough water into the pot and bring to a boil. Put the washed fresh beans in the boiling water and cook until seven When cooked, cook for about 3 to 4 minutes. Then take out the cooked beans and spread them out to cool, set aside for later use. Usually, you can take them out after cooking them until they change color. If they are overcooked, they will break easily.
Step 5: Drying
Be sure to choose a place with sufficient sunlight and good ventilation to dry the dried beans, and place the processed beans one by one to dry It is best to ride the beans cut in half on a rope or clothes drying rack in a herringbone shape, and try not to overlap the beans with each other.
Remember to put the beans in the room at night and take them out to dry during the day until the beans are completely dehydrated and dry. One pound of fresh beans can be dried into more than 1 tael of dried beans.
Step 6: Save
Collect the dried beans into bundles, put them in a plastic bag and tie the mouth of the bag tightly, and store them in a dry place to prevent the beans from drying out. Just get damp.
