Minced Pork Eggplant
Ingredients: long eggplant, minced meat, salt, garlic, cooking wine, light soy sauce, green onion, oil
Method:
1. Wash the eggplant, remove the stems, cut into strips, smash and chop the garlic, wash and chop the chives.
2. Pour an appropriate amount of vegetable oil into the wok and heat it up. Add the eggplant and sauté over low heat until soft. Remove the eggplant.
3. Leave oil in the pot, add minced garlic and saute until fragrant, add minced meat and stir-fry until fragrant.
4. Add cooking wine and a little light soy sauce and stir-fry until the minced meat is cooked. Add eggplant, add a little light soy sauce and stir-fry together. Finally, add salt and chopped green onion and stir-fry evenly.
Minced Pork Vermicelli Stew
Ingredients: minced meat, vermicelli, salt, ginger, garlic, light soy sauce, bean paste
Method:
1. Make the vermicelli with warm water in advance.
2. Heat oil in a wok, stir-fry minced ginger, garlic and bean paste until fragrant, add minced pork and stir-fry until fragrant, add light soy sauce.
3. Add broth and vermicelli, transfer to a pot, simmer until water is reduced, add salt to taste.
Spicy Potatoes with Minced Pork
Ingredients: Potatoes, minced meat, dried chili peppers, onions, garlic, soy sauce, black pepper
Method:
1. Wash the potatoes, peel and cut into pieces, prepare dried chili peppers, chopped green onions and minced garlic.
2. Season the minced meat, add 2 tablespoons of oil and 3 grams of salt, mix well and let stand for half an hour.
3. Heat the oil pan and fry the potato pieces until soft.
4. In another pan, add minced garlic and fry until golden brown.
5. Add the minced pork and stir-fry until all colors change, then add dried chili pepper.
6. Pour in 15 ml of fresh soy sauce to enhance the salty flavor.
7. Add the potatoes to the pot and stir-fry evenly and add the chopped green onions.
8. Grind in the black peppercorns and stir-fry evenly, turn off the heat and remove from the pan.
